What you'll be getting:
White Beans with Caramelized Onion and Spinach Casserole
Per Serving
3/4 c pinto beans
125 g caramelized onions and spinach. (salt and pepper, nutritional yeast, thyme, oregano)
30 g aged white cheddar (Organic Valley)
100 g quinoa (cooked with nutritional yeast, salt and pepper)
With the exception of the cheese, this meal is fat-free, it's high is protein and low in fat.
Equipment needed: casserole dish
Preheat the oven to 375.
Place all of your ingredients in front of the casserole dish.
First place the quinoa on the bottom of the dish.
Next, layer 1/2 of the spinach/onion mixture.
And then, half of the beans.
Empty the spinach on top of the beans.
Empty the beans onto the spinach.
Finish by placing the cheese on top of everything.
Place in the oven for 20 minutes.
Pull out of the oven after 20 minutes and serve.
From start to finish this dinner took less than 25 minutes. Enjoy!
